Bidaoui salad

Description

Easy-peasy to prepare. All you have to do is put the chickpeas in the oven with the spices, cut the ingredients small and mix the rest for the dressing. Done! This salad takes us on a trip and nourishes us with a good variety of ingredients.
Dates, black olives and tahini, together with warm chickpeas, give it a winter touch. But its yellow, green and red colors already bring us to the spring that is on its way.


Ingredients

Scale

250g chickpeas, cooked
150g whole grain couscous
½ teaspoon cumin, powdered
½ teaspoon ginger, powdered
½ teaspoon turmeric, powdered
¼ teaspoon curry powder
250g carrots, peeled and grated
A bunch of parsley, chopped
Some mint leaves.
40g almonds, sliced ​​(if you have time, you can toast the almonds in a small pan over low heat until lightly browned)
1 handful of black olives
3 dried tomatoes, diced
2 dates, chopped
1 pinch of salt
Black pepper

For the dressing:
Lemon juice
3 tablespoons of tahini (tahini)
2 garlic cloves
2 tablespoons olive oil, extra virgin
Mineral water
Salt


Instructions

  1. Easy-peasy to prepare. All you have to do is put the chickpeas in the oven with the spices, cut the ingredients small and mix the rest for the dressing. Done! This salad takes us on a trip and nourishes us with a good variety of ingredients.
    Dates, black olives and tahini, together with warm chickpeas, give it a winter touch. But its yellow, green and red colors already bring us to the spring that is on its way.
  2. Preheat the oven to 220C.
    Put the cooked chickpeas on a tray lined with baking paper. Add a splash of olive oil, a pinch of salt and season with cumin, ginger and curry.
    Mix it with your hands, and leave it in the oven for about 20 minutes, until they look golden and crispy.
  3. In the meantime, put the couscous in a bowl with a pinch of salt and half a teaspoon of turmeric. Stir. Slowly add boiling water, just enough so that the couscous is submerged an inch below. Cover with a kitchen towel and put it aside.
  4. Prepare the other ingredients and put them together in a bowl. In a jar with a lid, put the ingredients to make the dressing. Cover and shake to integrate the sauce.
  5. In a salad bowl, put the warm ingredients, the chickpeas and the couscous. Add the rest of the ingredients and stir. Finish with your tahini dressing, some black sesame seeds and toast almonds. Time to eat!
