Description

A mythical of the winter season that makes us all fall in love for life. Here I share my version 2022. You have to try it, if you haven’t already done it in Ecocirer. Let’s go with the recipe!  

 

Getting a healthier version of a mythical recipe always takes a process. This cake is vegan and I have reduced the white sugar to the maximum. It is important to have fresh carrots and nuts. And get a vegan cream cheese, very similar to Philadelphia cheese. It’s possible!  

 

 


Ingredients

Scale

Ingredients for the dough:

80g white sugar

70 g coconut sugar

250 ml oat milk

4 tbsp of sunflower oil

1 spoon apple cider vinegar

300g spelled flour

1 teaspoon baking powder

Pinch of salt

1 medium carrot, chopped

80g chopped walnuts

1 tsp ground cinnamon

1 tsp ground ginger

1 tsp clove powder

1 tsp allspice powder

1 tbsp chia seeds

Ingredients for cream cheese:

Plain coconut yogurt

Natural probiotic powder

Squeeze of lemon

2 tablespoons of agave syrup

1 tsp vanilla

Others:
Half orange

Lemon peel

Chopped pistachios


Instructions

All you have to do is prepare the cream cheese a day before. Mix all the ingredients, pour the yogurt on a thin kitchen towel, squeeze out the liquid and leave the yogurt dripping in the fridge for 24 hours. You can see the images here. In this case, we cut the process, so the cheese does not complete its natural fermentation. 

 

For the dough, we can mix all the ingredients in a large bowl. Bake at 180º for 30 minutes. Until when you prick its center, the toothpick comes out clean. Let cool and divide the cake into two equal halves. We squeeze half an orange in one half, to give it juiciness, and fill with cream cheese. Cover with the other half and cover with the remaining cream cheese. You can drop some chopped pistachios and the lemon peel zest.  Enjoy!
