Here the recipe that I made in our last health retreat of “smell and taste” with essential oils.
So tasty! Perfect for both seasons, summer and autumn. Blessed tomatoes!
In summer, accompany it with a fresh and light salad, or some green asparagus with a drizzle of olive oil. In fall, add rosemary.
Tomato quiche
Ingredients.
Dough
190gr spelt flour
80gr vegan butter, cold and cut into cubes
1 Tbsp chia seeds, ground
60gr ice water
Pinch of salt
Filling:
400gr natural tofu
1 medium onion, purple and thinly sliced
1 tbsp extra virgin olive oil
½ tsp salt
4 garlic, smashed
½ tsp ground turmeric, for color
2 tsp onion, powdered
1 tsp ground ginger
½ tsp kala namak
2 tbsp chickpea flour
60gr oat milk
8 tomatoes
Olive oil, salt and black pepper
Fresh spices; oregano, thyme, sage, basil, rosemary…
Step 1
In fall, add rosemary. Sauté vegetables and eat warm. In both cases, a few magic drops of oregano essential oil, will give it a very special touch. Ideal for sunsets on the beach, country side picnics or romantic lunches. With a French name, an Italian flavor and Spanish tomatoes, this dish is filled with a Mediterranean feeling that should be enjoyed where it deserves, outdoors.
Step 2
Preheat the oven to 175º. And start chopping tomatoes. Some of them sliced a finger thick, and the others in half. A bit of olive oil, salt, pepper and a nice touch of spices; oregano, thyme, sage, rosemary … whatever you have on hand. Bake about 30-45 minutes
Step 3
Lets start with the dough. Add the flour, seeds and the rest of the ingredients to a bowl. Kneed a moldable dough, neither sticky nor brittle, and let it rest in the fridge.
Step 4
The filling. Add the tofu to the grinder with all the ingredients for the filling, well seasoned with spices and a touch of turmeric, to enhance its color. . Grind, while you fry some garlic with red onion and grated ginger.
Add it to the tofu.
The rest is a piece of cake
Step 5
Spread the dough in a mold, base and sides. . So that it does not grow too much, prick it with a fork. Then, cover it with the roasted tomato slices, fill it up to the surface, with the tofu cream and decorate it with the half tomatoes. I like to leave their twig.
Step 6
Bale it for 45min. Ready to enjoy!
