Description

I’ve always had a bit of a hard time eating purple cabbage. It is done! We have it! With this recipe you can make balls, burgers or fittatas. Depending on the occasion and the way you want to give it. 

You need very few ingredients. All affordable in any season and as a result you have a very versatile, delicious and colorful recipe!

Ingredients

Scale

Vegetable balls:

1 ½ carrot

1 ½ purple cabbage

200g corn

Rosemary, parsley and thyme, fresh

50 g cornmeal

40 g rice flour

Olive oil

Salt and pepper 

Tzatziqui sauce:

1 coconut yogurt

1 clove garlic

1 ginger clove

¼ red onion, fine

Salt and pepper

½ lemon juice

1/2 crushed cucumber, previously drained

Fresh coriander 


Instructions

Pour the shredded carrot and cabbage into a large bowl, add the corn, flax seeds, rosemary, parsley and thyme, salt and pepper, rice flour and corn flour. Mix all the ingredients, until it is easy for you to shape balls or burgers. 

You can fill a tray with balls on baking paper and keep them raw in the freezer. At the time, you spray them with olive oil and put them in the oven for about 15-20 min at 175º. 

With them, you can accompany various Buddha bowls with rice or quinoa. You can fill your sandwich, taco, or eat them as is. They go very well with a fresh tzatziqui sauce. I also leave you the ingredients.
